The Ancient Greek grammar is really perplexing, with a vast amount of forms and rules.
Almost all part of speech are highly inflected, and their forms have unlimited exceptions and sub-rules. This means that if you are not planning to become a philologist, a classicist or a paleographist, you should not try and memorize every form and every rule.
When studying an Ancient Greek text a Grammar handbook is always an important tool to use!
Some online (digitized), free grammar textbooks that are recommended are:
Babbit, Frank Cole. A Grammar of Attic and Ionic Greek
Goodell, Thomas Dwight. A School Grammar of Attic Greek
Brugmann, Karl. Griechische Grammatik (German)
These are old but trusted grammars.
What I most recommend is buying a new grammar, that is easy to use and read (either online or on paper - whatever is easier to usefor you)

How to start
After learning the Alphabet and the Accents you are able to slowly read almost any text that you encounter. Most importantly, when you are reading a translated text, you are able to follow the correlate the sentences between translated and original.
According to experts, there are two ways you can continue from this point. Either by starting to read authentic texts from translation while having the authentic text nearby and gradually learn grammatical and syntactic rules that you encounter. Or start traditionally, by studying Grammar, Syntax and Vocabulary.
My personal advice is to only learn some basic grammatical feature, and remember them while you encounter them.
